Highlights Of The Week – Feb 21st 2021

Welcome back to another post on my highlights of the week-Feb 21st 2021!

Where do I even begin telling you how this week went? It has been a whirlwind of emotions, that’s for sure. For those of you who don’t know, I live in Scotland and, we aren’t doing too well with COVID, although things are improving slowly. To be honest, it seems pretty never-ending so I have really struggled with it the past few days. Lockdown 1 and 2 did not seem as hard as this one for some reason, maybe because it has just been too long now.

The good news is, the weather seems to be warming up and, I could almost smell Spring during my walk the other day. Here’s hoping it comes soon! I am especially looking forward to all seasonal produce making it that bit more exciting.

On a brighter note, Callum and I decided to treat ourselves to a banquet brunch on Saturday with all the foods we love. We got a lot of it from Pipers Farm. I have heard about them so much the past few months on social media so we decided to give them a try. Their website and photos are gorgeous too. Safe to say, the food was amazing! We got a mixture of all sorts of things that we don’t usually have. I literally cannot remember the last time I had a pie or a croissant but, it was worth it! It was also a much- needed break from cooking. Look at the inside of that steak pie on the cover of this post, SO good! Also, look at the ‘little’ cheese selection we chose, they were so unusual and delicious!

I also came across this quote from Nelson Mandela the other day and stuck it to my wall because I love it so much: ‘A winner is a dreamer who never gives up’. Thought I would share it for anyone that needs to hear it, remember that especially during tough times! Things will work out, we just need to trust the process (no matter how hard that may seem at times!).

I shared some of my all-time favourite recipes this week, homemade hummus dip, a classic in my fridge and a go-to for quick snacks.

My new favourite side, sweet potato wedges with green tahini and feta, not only do they look amazing they taste UNREAL!!!

The one and only potato and parsnip soup for a comforting and wholesome meal, topped with all things good, crushed walnuts, pumpkin seeds and sage leaves. Earthy and delicious.

Favourite Recipe

I always find this section the hardest part! I love them all so much so I do find it tough to make a decision, however, this week it has to be my Pad Thai. This recipe is one of my most visited and with good reason as it tastes AMAZING!! Better than any takeout and, anyone who has tried it has loved it too. The perfect bowl of comfort food and your Sunday night dinner sorted!

What’s Cooking Next Week

I won’t share too much but I have two recipes that I am super excited to share already. One is a type of homemade bread and, the other is a classic and traditional Greek dish you can make with that specific bread. Have I given too much away? You will have to wait and see but, let me tell you that the flavours are sooo good!! I also have an exciting slow cooker recipe coming up that will compliment another recipe which I am sure you will LOVE just as much as I do!

What I’ve Got My Eye On…

This was a big investment but one of my favourite ones to date, this STAUB cast iron skillet, I use it for everything it’s ridiculous. It is worth every penny and the best pan I have had by far. ‘Normal’ pans do not last in this house, non-stick becomes stick very quickly so it was definitely worth the investment to get something I could actually rely on!

The best investment I have ever made in the kitchen has to be this can opener. I know it may sound ridiculous but, after countless times of hurting myself with a can opener or water from the can going everywhere, something had to change, cue the electric can opener. I couldn’t live without it now!

If you follow me on social media, you will know that I love my morning coffee. I definitely have my eye on these cute cappuccino cups, loving the double-wall glass look lately.

For fashion lovers, I am obsessed with & Other Stories, their clothes are so stunning and super high quality. Look at this wrap cardigan, so pretty and perfect for Spring!

I came across these bath bombs and, they are so beautiful. Although I don’t think I would use them to not ruin them! I mentioned last week that I used to hate baths but love them so much now, and look forward to them to properly relax. Bath bombs make it that bit more luxurious, don’t you think?

Favourite Q&A’s

I get a lot of DM’s from all of you asking me so many different questions and I appreciate all the support with the blog! My three favourite questions this week are:

  1. Is blogging hard?
    I have received this question a few times from some of you that are looking to start a blog. I won’t lie it is super tough and, you have to truly love it to keep it up. You can’t start a blog for money that’s for sure, well at least not at the beginning because you won’t see a penny for a long time. But I love it for how much of a creative outlet it has been for me and, love to share all my recipes with you. I’ve also learnt so much from the blog as I am doing a Masters in digital marketing so, this ties in with it perfectly. It is like a full-time job without getting paid (well at the beginning anyway!).
  2. What time do you go to bed to be up at 5 am
    I get asked this question all the time. I am still going strong with getting up at 5 am from Monday to Friday by the way, and by the time the weekend comes around, I am wide awake at 5 am and up at 6 am (not a great lie in). Not complaining though because I love doing it and have never felt more productive! But to answer the question, around 10 pm. I will also be doing a YouTube video on my 5 am morning routine, so stay tuned for that.
  3. Does any of the food you make go to waste?
    Another big question I get asked often. The answer is no nothing goes to waste, absolutely everything gets eaten. I live with a human vacuum who eats everything I put in front of him, and anything he can’t eat I give to his brother who lives with seven of his friends!

Free Time Loving

I read Sarah Knights ‘Get your sh*t together’ book, it is funny but also eye-opening to how much we don’t manage to achieve in a day. It’s not all about being productive, I love a good lazy day myself but, it is so important to not feel overwhelmed with all the tasks you have and end up doing none of them. In the book, it suggests the must-do list method, listing three must-do things every day and the rest as just ‘to-dos’. As long as you can tick off your three must-dos, you are winning the day. It is worth a read.

Currently listening to the ‘How to Fail’ podcast that was recommended by my good pals. It interviews all sorts of famous people from athletes, to celebrities to authors. Super interesting and relates how these people’s failures eventually led them to success. Without the stumbling blocks, they wouldn’t have achieved greatness. It is the journey that matters after all!

You HAVE to watch ‘The Vanishing at the Cecil Hotel’, seriously. I was terrified for two nights but loved it. I had heard of the hotel before as it is literally the most haunted hotel in the world! The case is crazy and very sad too, the documentary is so well made and will really leave you guessing. If you get scared at anything though, like me, watch it during the day!

I am also on the lookout for the Britney Spears documentary. I’ve been seeing trailers and media for it everywhere! Apparently it’s shocking, so I am curious to watch that once it gets released here.

Currently watching Superstore on Netflix! Don’t diss it until you watch it, the concept is so fab. It is cringey at times but once you get into it it’s HILARIOUS!!! You really start relating to some of the characters too. Give it a watch, it won’t disappoint.
